NATURALLY FERMENTED VINEGAR
Winter melon, rich in vitamins and nutrients, has long been prized in Eastern Asia - an integral ingredient in celebratory meals as well as the Korean royal family's kitchen. It remains popular to this day, appearing in everyday cooking as part of stir fries, soups or even pickles. With high concentrations of vitamins C and B2, dietary fiber, zinc, iron, phosphorus, and potassium, it has been used to aid digestion, boost the immune system, and improve eye and heart health. Its high fiber, low calorie and diuretic properties make it a preferred weight loss and detoxification tool. The Hanega family grows winter melon in house and mixes it with their signature 10-year-aged mother of vinegar to ferment for another three years.
Though winter melon is a vegetable, this vinegar has a bright flavor, rounded out by a slight sweetness that may trick you into thinking that you're tasting a fruit based vinegar. Our favorite way of using this vinegar has been as a vinaigrette, or diluted with sparkling water and a slice of lemon. We hear that it also makes a great dipping vinegar for tempura or pan fried dumplings when mixed with a generous amount of pepper.
